Bacalao El Barquero began in 1950 as a small family drying house in Bermeo, Basque Country. Four generations later, it is still the same family, the same salt, the same time, the same respect for the product.

The process
A curing process that
cannot be rushed
The fresh fillet enters the curing house with one criterion: time. Salted in Atlantic sea salt, hand-turned, dried in natural Basque air currents. Between 18 and 24 months. It cannot be accelerated without losing what matters.

We visit our producers in Spain, taste the batches ourselves, and select only what meets our standards: full traceability, artisanal methods, and respect for seasonality.
